Welcome, Year of the Dog. The dog is the next animal sign in the Chinese zodiac and, as the new Year of the Dog takes center stage with the Chinese New Year celebration starting Feb. 16, Palm Beach’s pan-Asian restaurant Echo ( http://www.thebreakers.com/dining/echo ) is celebrating, too.

Friday through Sunday, look for a cornucopia of dim sum specials at Echo, which, at 230A Sunrise Ave., is one of six open-to-the-public restaurants by The Breakers ( http://www.thebreakers.com ) .

Dim sum, a style of Cantonese cuisine characterized by small or bite-sized morsels (such as dumplings) typically served in steamer baskets or on little plates, is a culinary delight during the multi-day Chinese New Year celebration.

Dim sum specials this weekend at Echo will vary and no doubt reflect the diverse styles and flavors of dim sum offered on the indoor-outdoor restaurant’s regular menus.

Echo's regular dim sum selections range from lobster Rangoon and steamed shrimp dumplings, to pan-fried pork potstickers and samplers that include an assortment of goodies.

Dim sum bites start at around $12 for three steamed chicken shumai, which are like open-faced dumplings.

For more information about Echo and/or its special Chinese New Year dim sum specials this weekend, call 659-8488 or visit www.thebreakers.com/dining/echo ( http://www.thebreakers.com/dining/echo )
